I saw this recipe on Oh Joy! the other day and wanted to try it for myself. We had all the ingredients on hand, even the extra ripe bananas. I like to make Sunday brunch so it all just kind of worked out.
The recipe calls for just 3 ingredients; peanut butter, egg and bananas mixed together and cooked like regular pancakes. To make the meal a little more filling, I added about a cup and half of oatmeal and 3 scoops of vanilla protein powder. Really good. They were not as fluffy as regular pancakes, actually kind of heavy, but still tasty. I topped mine off with greek yogurt and a sprinkle of maple sugar.
Healthy Pancakes
- 4 ripe bananas
- 2 eggs
- 2 generous spoonfuls of peanut butter (approx. 4 tbsp)
- 3 scoops of whey protein (chocolate or vanilla)
- 1 1/2 cups of oatmeal
- Greek yogurt (topping)
- Maple Sugar (topping)
